Serves 4. 1 tbsp lemon juice ¼ cup finely chopped coriander (dhania) 2 tsp oil 2 tsp finely chopped garlic (lehsun) 2 tsp finely chopped green chillies ¼ cup finely chopped onions ¼ cup finely chopped cabbage ¼ cup finely chopped carrots 3 cups basic vegetable stock Salt to taste 2 tsp cornflour dissolved in 2 tbsp water 1. Heat the oil in a deep non-stick pan, add the garlic and green chillies and sauté on a medium flame for a few seconds. 2. Add the onions and sauté on a medium flame for 1 to 2 minutes. 3. Add the cabbage and carrots and sauté on a medium flame for 1 minute. 4. Add the basic vegetable stock, lemon juice, salt and cornflour-water mixture, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally. 5. Add the coriander and mix well. Serve immediately.

It uses one of punjabi cuisines most loved ingredients butter. In traditional punjabi houses, the women folk make pure white butter from thick creamy milk. The liquid that is left over after the butter has been removed is very delicious and cooling and makes a tasty drink. Soft paneer chunks are dunked into a rich tomato based gravy a must try for all paneer lovers! Preparation Time: 15 minutes Cooking Time: 25 minutes Makes 2 servings Ingredients For The Red Gravy 1 cup chopped tomatoes 1/2 cup sliced onions 1/4 cup cashewnuts (kaju) 2 whole dry kashmiri red chillies Other Ingredients 2 tbsp butter 1 tsp garlic (lehsun) paste 25 of cinnamon (dalchini) 2 cloves (laung / lavang) 2 cardamoms 1 bayleaf (tejpatta) 2 tsp dried fenugreek leaves (kasuri methi) 1 tsp garam masala 3 tbsp tomato puree salt to taste 2 tbsp whisked curds (dahi) 1/2 tsp sugar 2 tbsp fresh cream 1 cup paneer (cottage cheese) strips , cut into 1" x 1/4" For The Garnish 1 tbsp fresh cream Method For the red gravy 1. Combine all the ingredients along with 1 1/2 cups of water in a kadhai and boil on a high flame for 10 to 15 minutes or till the tomatoes are soft, while stirring occasionally. 2. Cool and blend in a mixer to a smooth paste. Keep aside. How to proceed 1. Heat the butter in a kadhai, add the garlic paste and sauté on a medium flame for a few seconds. 2. Add the cinnamon, cloves, cardamom and bayleaf and sauté on a medium flame for a few more seconds. 3. Add the dried fenugreek leaves, garam masala, tomato purée and red gravy and sauté on a medium flame for another 2 to 3 minutes, while stirring continuously. 4. Add the salt, mix well and cook on a medium flame for 1 to 2 minutes, while stirring continuously. 5. Add the curds, mix well and cook on a medium flame for 1 more minute. 6. Add the sugar, 1/4 cup of water, paneer and cream, mix well and cook on a medium flame for another 2 minutes. 7. Serve hot garnished with fresh cream.

Add cucumber, onions, curds and green chillies to otherwise bland jowar flour to create soft and tasty pancakes. Pair them with fresh green chutney for a great breakfast! Preparation Time: 7 minutes. Makes 7 mini pancakes. ½ cup jowar (white millet) flour ½ cup grated cucumber 2 tbsp finely chopped onions 1 tsp finely chopped green chillies Salt to taste 1 tbsp fresh curds (dahi) A pinch of turmeric powder (haldi) 1 tbsp finely chopped coriander (dhania) Oil for greasing and cooking For serving Green chutney 1. Combine all the ingredients along with approx. 5 to 7 tbsp of water in a deep bowl and mix well to make a batter of pouring consistency. 2. Grease a non-stick mini uttapa pan with a little oil. 3. Pour 2 tbsp of the batter in each of the uttapa moulds and spread it gently in a circular motion to make a round. 4. Cook using a little oil, till they turn brown in colour from both sides. Serve immediately with green chutney.

For the chilli-garlic paste 20 whole dry Kashmiri red chillies ¼ cup chopped garlic (lehsun) Other ingredients 3 tbsp oil 1 tbsp finely chopped garlic (lehsun) 1 tsp finely chopped green chillies ½ tbsp finely chopped ginger (adrak) 2 tbsp finely chopped onions 1 tbsp cornflour dissolved in 2 tbsp water 1 tbsp vinegar 2 tsp sugar Salt to taste For the chilli-garlic paste 1. Boil 1 cup of water in a deep pan, add the dry red chillies and garlic, mix well and cook on a medium flame for 5 to 7 minutes, while stirring occasionally. Keep aside to cool. 2. Blend in a mixer to a smooth paste using approx. 1 tbsp of water. Keep aside. How to proceed 1. Heat the oil in a broad non-stick pan, add the garlic, green chillies, ginger, onions and sauté on a medium flame for 1 minute. 2. Add the prepared chilli-garlic paste, and ½ cup of water, mix well and cook on a medium flame for 1 more minute, while stirring occasionally. 3. Add the cornflour--water mixture, vinegar, sugar and salt, mix well and cook on a medium flame for 1 to 2 minutes, while stirring continuously. 4. Cool completely and keep refrigerated. Use as required.

Vegetable manchurian comes from the kitchens of chinese settled in eastern india, and is a popular dish across the country today! Preparation Time: 20 minutes Cooking Time: 20 minutes Makes 3 servings Ingredients For The Manchurian Balls 2 cups finely chopped cabbage 1 cup grated carrot salt to taste 2 pinches freshly ground black pepper (kalimirch) powder 2 tbsp cornflour 4 tbsp plain flour (maida) 1 tsp finely chopped green chillies 1 tbsp finely chopped garlic (lehsun) oil for deep-frying For The Gravy 3 tbsp oil 2 tbsp finely chopped garlic (lehsun) 1 tbsp finely chopped green chillies 2 tsp finely chopped ginger (adrak) 2 tbsp spring onion whites 2 tbsp finely chopped capsicum 1/4 cup cornflour dissolved in 1/2 cup cold 1 1/2 tbsp soy sauce salt to taste 2 pinches sugar 2 tbsp chilli-garlic sauce For The Garnish 1 tbsp finely chopped spring onion greens Method For the manchurian balls 1. Combine the cabbage, carrots, salt, pepper, cornflour and plain flour in a bowl and mix well. 2. Add the green chillies and garlic and mix well. 3. Divide the mixture into 10 equal portions and shape each portion into a round ball (if you find it difficult to form balls, sprinkle a little water). 4. Heat the oil in a kadhai and deep-fry the balls, a few at a time, on a medium flame till they turn golden brown in colour from all the sides. 5. Drain on absorbent paper and keep aside. For the gravy 1. Heat the oil in a broad non-stick pan on a high flame till it smokes. 2. Add the ginger, garlic, green chillies and sauté on a high flame for a few seconds. 3. Add the spring onion whites and capsicum and sauté on a high flame for 1 minute. 4. Add the cornflour-water mixture, 1 cup of water and soya sauce, mix well and cook on a high flame for 2 to 3 minutes. 5. Add the salt, sugar and chili garlic sauce, mix well and cook on a high flame for 30 seconds. How to proceed 1. Just before serving, add the manchurian balls to the hot gravy, mix gently and cook on a medium flame for 2 minutes. 2. Serve immediately garnished with spring onion greens. Handy tip: The gravy is best made just before serving or else it might thicken.

Makes 10 poodlas. 3 cups cooked rice (chawal), mashed ¼ cup whole wheat flour (gehun ka atta) ¾ cup besan (Bengal gram flour) ¼ tsp turmeric powder (haldi) ¼ tsp asafoetida (hing) ¼ tsp chilli powder 5 tbsp curds (dahi) ¼ cup finely chopped coriander (dhania) 1 tsp finely chopped green chillies ¼ tsp sugar Salt to taste 1 tsp oil Oil for greasing and cooking For serving Green chutney Tomato ketchup 1. Combine all the ingredients and approx. ¾ cup of water in a deep bowl and mix well. 2. Heat a non-stick tava (griddle) and grease it using little oil. 3. Pour a ladleful of the batter on it and press gently with the help of the back of the spoon and spread to make a 100 mm. (4") diameter circle. 4. Cook the poodla using a little oil, till both sides turn golden brown in colour. 5. Repeat steps 2 to 4 to make 9 more poodlas. Serve hot with green chutney or tomato ketchup.

Just mix all the ingredients, let them rest for half an hour, and then steam the batter The tempering added on top of the dhokla after it is cooked is the master stroke, as in the case of any dhokla recipe. It gives the Semolina Dhokla a fabulous aroma and special flavour. Serve it with peppy green chutney to make a yummy snack. Preparation Time: 5 minutes. Cooking Time: 20 minutes. Serves 4. Soaking time: 30 minutes. 1½ cups semolina (rava/sooji) ½ cup curds (dahi) 1½ tsp green chilli paste 2 tbsp oil Salt to taste 1½ tsp fruit salt 1 tsp mustard seeds (rai / sarson) 1 tsp sesame seeds (til) ¼ tsp asafoetida (hing) 1 tbsp finely chopped coriander (dhania) For serving Green chutney 1. Combine the semolina, curds, green chilli paste, 1 tbsp of oil, salt and 1½ cups of water in a deep bowl and whisk well. Cover with a lid and keep aside for 30 minutes. 2. Just before steaming the dhoklas, add the fruit salt and 2 tsp of water. When the bubbles form, mix gently. 3. Pour the batter immediately into a 175 mm. (7”) diameter greased thali and shake the thali clockwise to spread the batter in an even layer. 4. Steam in a steamer for 12 minutes. Keep aside. 5. Heat the remaining 1 tbsp of oil in a small non-stick pan, add the mustard seeds, sesame seeds and asafoetida and sauté on a medium flame for 30 seconds. 6. Pour the tempering over the dhoklas, sprinkle the coriander evenly over it. 7. Cool slightly andcut into equal sized squares pieces. Serve immediately with green chutney.

It is swiftly portioned out onto serving plates when the orders flow in, to appease the severest of hunger shots. Preparation Time: 10 minutes Cooking Time: 15 minutes Makes 4 plates Ingredients 3 tbsp butter 2 tsp cumin seeds (jeera) 1 1/2 tbsp chilli-garlic paste 1/4 cup finely chopped onions 1/4 cup finely chopped capsicum 1 cup finely chopped tomatoes 1/4 tsp turmeric powder (haldi) salt to taste 1 tsp chilli powder 2 tsp pav bhaji masala 2 1/2 cups cooked rice (chawal) 1/2 cup boiled green peas For The Garnish 2 tbsp finely chopped coriander (dhania) Method 1. Heat the butter on a large tava (griddle), add the cumin seeds. 2. When the seeds crackle, add the chilli-garlic paste, mix well and sauté on a medium flame for 1 to 2 minutes. 3. And the onions, mix well and sauté on a medium flame for another 1 to 2 minutes. 4. Add the capsicum, mix well and sauté on a medium flame for 2 more minutes. 5. Add the tomatoes, mix well and again cook on a medium flame for 3 to 4 minutes, while stirring occasionally. Preferably use a potato masher to mash the vegetables lightly. 6. Add the turmeric powder, salt, chilli powder, pav bhaji masala and 1/4 cup of water, mix welland cook on a medium flame for 1 to 2 minutes, while stirring occasionally. 7. Add the rice and green peas, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally. 8. Serve immediately garnished with coriander.

It is basically a wonderful sweet and spicy curd mixture thickened with gram flour, which can be enhanced in many ways using other ingredients like pakoras and koftas. This simple dish requires tact and perfection, which comes from practice. Remember never to boil the kadhi on a high flame as it tends to curdle. Preparation Time: 5 minutes. Cooking Time: 15 to 17 minutes. Serves 4. 2 cups fresh curds (dahi) 5 tbsp besan (Bengal gram flour) 2 tsp ghee ½ tsp cumin seeds (jeera) ½ tsp mustard seeds (rai / sarson) 2 pinches of asafoetida (hing) 5 curry leaves (kadi patta) Salt to taste 1 tsp ginger-green chilli paste 2 tbsp sugar For the garnish 2 tbsp finely chopped coriander (dhania) For serving Rotli Puran poli Khichdi 1. Combine the curds and besan in a deep bowl and whisk well till no lumps remain. 2. Add 3 cups of water and mix well and keep aside. 3. Heat the ghee in a kadhai and add the cumin seeds and mustard seeds. 4. When the seeds crackle, add the asafoetida and sauté for a few seconds. 5. Add the prepared curds-besan-water mixture, curry leaves, salt, ginger-green chilli paste and sugar, mix well and bring to a boil for 2 minutes, while stirring continuously. 6. Reduce the flame and simmer for 10 to 12 minutes, while stirring occasionally. Garnish with coriander and serve hot with rotli, puran poli and Khichdi.

Heat the butter in a broad non-stick pan, add the plain flour and cook on a slow flame for 1 to 2 minutes, while stirring continuously. 2. Add the milk, mix well and cook on a medium flame for 3 to 4 minutes, or till the sauce thickens, while stirring continuously. 3. Add the salt and pepper, mix well and cook on a medium flame for 1 more minute. 4. Store in an air-tight container and use as required. How to proceed 1. Heat the butter in a broad non-stick pan, add the mixed vegetables and sauté on a medium flame for 2 minutes. 2. Add the white sauce, salt and pepper powder, mix well and cook on a medium flame for 3 minutes, while stirring occasionally. 3. Transfer the mixture into a baking dish, sprinkle the cheese evenly over it and bake in a pre-heated oven at 200°C (400°F) for 15 minutes. Serve immediately.

Add the prepared tomato pulp, oregano, chilli flakes, tomato ketchup, chilli powder and salt, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally. 6. Add the sugar, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally. 7. Store in an air- tight container and use as required.

Put 3 cups of hot water in a deep non-stick pan, add the soda bi-carb, crushed cumin seeds, green chillies, salt, rice flour and oil, mix well and cook on a medium flame for 1 to 2 minutes, while stirring continuously with help of a rolling pin. 2. Cover and cook on a slow flame for 5 minutes, while stirring occasionally. Keep aside. For the sauce 1. Heat the oil in a small pan, add the garlic and sauté on a slow flame till it releases flavour. 2. Remove from the flame, add the chilli powder and salt and mix well. Keep aside. How to proceed 1. Put the khichu in a bowl, pour a little of the sauce over it and serve immediately.

Combine the yellow moong dal and green chillies and blend in a mixer using a little water to make a paste of pouring consistency. 2. Transfer the paste to a bowl, add the salt, sugar, asafoetida, oil, turmeric powder, besan and curds and mix well to make a batter. 3. Just before steaming, sprinkle fruit salt and mix lightly. 4. Pour the batter into a greased 175 mm. (7") diameter thali. 5. Steam in a steamer for 10 to 12 minutes or till the dhokalas are cooked. Keep aside. 6. Heat the oil in a small non-stick pan and add the mustard seeds. 7. When the mustard seeds crackle, add the sesame seeds, asafoetida and sauté on a medium flame for 30 seconds. 8. Add the green chillies and sauté on a medium flame for 30 seconds. 9. Pour the tempering over the prepared dhoklas and spread it evenly. 10. Sprinkle the coriander and coconut evenly on top. 11. Cut into pieces and serve hot with green chutney.

Lightly grease a non-stick tava (griddle) with ½ tsp of oil. 6. Cook each tikki using 1/8 tsp of oil, till they turn golden brown in colour from both the sides. 7. Oats are rich in the beta-glucan enzyme which helps to lower blood cholesterol and glucose levels, while carrots and spinach are an excellent source of vitamin A. Preparation Time: 10 minutes. Cooking Time: 15 minutes. Makes 5 pancakes. 1 cup oats flour ½ cup grated carrot ½ cup finely chopped spinach (palak) 2 tbsp finely chopped coriander (dhania) 2 tsp finely chopped green chillies Salt to taste ½ tsp fruit salt 1½ tsp oil for greasing and cooking For serving Dahiwali phudina ki chutney 1. Combine all the ingredients, except the fruit salt, along with 1 cup of water in a deep bowl and mix well to form a batter of dropping consistency. 2. Just before making the pancakes, sprinkle the fruit salt and 2 tsp of water over the batter. 3. When the bubbles form, mix gently. 4. Heat a non-stick tava (griddle) and grease it using ¼ tsp oil. 5. Pour a spoonful of the batter on it and spread in a circular motion to make 100 mm. (4") thick round. 6. Cook, using ¼ tsp of oil, till it turns light brown in colour from both sides. 7. Repeat with the remaining batter to make 4 more pancakes. Serve immediately with dahiwali phudina ki chutney. While north Indians like to have it any time of the day, for breakfast, lunch or dinner, south Indians too have borrowed this dish from the north and incorporated it into their supper and dinner menus. What makes these whole wheat parathas so appealing is the soft and tasty filling of potatoes flavoured with peppy spice powders and crunchy onions. Green chillies spike up the flavour of the stuffing, while amchur gives it an enjoyable tinge of tanginess. These parathas taste best when served hot with pickles and curds, but they may also be carried in a dabba. Preparation Time: 10 minutes Cooking Time: 30 minutes Makes 12 servings Ingredients For The Dough 2 1/4 cups whole wheat flour (gehun ka atta) 2 tbsp melted ghee salt to taste For The Stuffing 2 1/2 cups boiled, peeled and mashed potatoes 2 tsp melted ghee 1 tsp cumin seeds (jeera) 1/2 cup finely chopped onions 1 tbsp finely chopped green chillies salt to taste 1/2 tsp chilli powder 2 tbsp finely chopped coriander (dhania) 2 tsp dried mango powder (amchur) Other Ingredients whole wheat flour (gehun ka atta) for rolling ghee for cooking and greasing For Serving curds Method For the dough 1. Combine the whole wheat flour, ghee and salt in a bowl and mix well. 2. Add enough water and knead into a semi-stiff dough. Keep aside. For the stuffing 1. Heat the ghee in a broad non-stick pan and add the cumin seeds. 2. When the seeds crackle, add the onions and sauté on a medium flame for 1 to 2 minutes. 3. Add the green chillies, mix well and sauté on a medium flame for 1 minute. 4. Add the potatoes, salt, chilli powder, coriander, dry mango powder, mix well and cook on a medium flame for 1 to 2 minutes, while stirring continuously. 5. Divide the stuffing into 12 equal portions and keep aside. How to proceed 1. Divide the dough into 12 equal portions and roll a portion of the dough into a circle of 75 mm. (3") diameter circle. 2. Place a little stuffing in the centre of the circle. 3. Bring together all the sides in the centre and seal tightly. 4. Roll again into a circle of 150 mm. (6") diameter circle with a little flour. 5. Heat a non-stick tava (griddle) and cook the paratha using a little ghee until golden brown spots appear on both the sides. 6. Repeat with the remaining dough and stuffing to make 11 more parathas. 7. Serve immediately with fresh curds.

Keep aside. For the noodles 1. Heat the oil in a wok, add the spring onion whites, garlic and red chillies and sauté on a high flame for 30 seconds. 2. Add the carrots, cabbage, capsicum and sauté on a high flame for 1 to 2 minutes. 3. Add the noodles, soya sauce and salt, mix well and toss on a high flame for 1 to 2 minutes. 4. This modak on the other hand just requires you to pack the mixture into the modak mould, and de-mould after a press. Preparation Time: 10 minutes. Cooking Time: 6 minutes. Makes 21 modaks. 2 cups crumbled mava ½ cup sugar ¼ cup blanched, peeled and finely chopped pistachios ¼ tsp cardamom (elaichi) powder A few strands of saffron 1 tbsp milk 1. Combine the mava and sugar in a broad non-stick pan. 2. Switch on the flame and cook the mava mixture on high flame for 1 minute, while stirring continuously. 3. Reduce the flame to medium and cook for 5 minutes, while stirring continuously. 4. Remove from the flame, transfer it into a bowl and keep aside to cool for 6 to 7 hours. 5. Combine the saffron and milk in a small bowl, mix well and keep aside. 6. Crumble the mava with your finger tips, add the pistachios, cardamom powder and saffron-milk mixture, mix well. 7. Take a portion of the mava mixture, place it on one side of the modak mould and close the modak mould tightly. 8. Remove the excess modak mixture from the edges of the modak mould and demould the modak. 9. Repeat steps 7 to 8 and make 20 more modaks and serve. Handy tip: These modaks stay fresh for 3 to 4 days at room temperature.

Serves 4. 6 tbsp Schezuan sauce 3 cups cooked long grained rice (chawal) 1½ tbsp oil 2 tsp finely chopped garlic (lehsun) 1 tsp finely chopped ginger (adrak) ¼ cup finely chopped spring onions (whites and greens) ¼ cup finely chopped capsicum ¼ cup finely chopped carrots ¼ cup finely chopped French Beans 2 tbsp finely chopped celery (ajmoda) 1 tsp soya sauce 1 tsp vinegar Salt to taste For the garnish 2 tbsp finely chopped spring onion greens 1. Heat the oil in a deep non-stick pan or a wok, add the garlic and ginger and sauté on a medium flame for a few seconds. 2. Add the spring onion whites and greens, capsicum, carrots and French beans and sauté on a high flame for 2 to 3 minutes. 3. Add the celery, Schezuan sauce, soya sauce, vinegar and 2 tbsp of water, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally. 4. Add the rice and salt, mix well and cook on a medium flame for 2 minutes, while stirring occasionally. Serve immediately garnished with spring onion greens.

Actual risotto is made using arboria rice but you can also use basmati rice, it taste the same. . . This rice prepartion is cheesy, colorful and fun to eat. . Serve it with garlic bread. . Preparation Time: 10 minutes Cooking Time: 8 minutes Baking Time: 10 to 15 minutes. Baking Temperature: 200°C (400°F) Makes 3 servings Ingredients 1 1/2 cups boiled long grained rice (basmati) 2 tbsp butter 1/4 cup finely chopped onions 1/2 cup finely chopped coloured capsicum 1 1/4 cups milk 3 tbsp fresh cream 3/4 cup grated processed cheese salt and freshly ground black pepper powder to tatse Method 1. Heat the butter in a broad non-stick pan, add the onions and sauté on a medium flame for 1 to 2 minutes or till they turn translucent. 2. Add the capsicum and sauté on a medium flame for 1 to 2 minutes or till the capsicum becomes soft. 3. Add the rice, milk, cream, salt, pepper and ¼ cup of cheese, mix well and cook on a medium flame for 3 to 4 minutes, while stirring occasionally using a potato masher. 4. Pour the mixture in a baking dish and spread it evenly using a spoon and sprinkle the remaining 1/2 cup of cheese on top. 5. Bake in a pre-heated oven at 200°c (400°f) for 10 to 15 minutes. 6. Serve immediately.

Preparation Time: 10 minutes Makes 1 cup Ingredients 2 cups roughly chopped mint leaves (phudina) 1 cup roughly chopped coriander (dhania) 4 green chillies , roughly chopped 1/2 cup thinly sliced onions (optional) 12 mm (1/2") piece ginger (adrak) salt to taste 2 tsp sugar 1 1/2 tbsp lemon juice Method 1. From garlicky and tangy to mildly spicy, this delicious Palak Khichdi has everything you would love to have in a one-dish meal .With greens, rice and dal, it is really sumptuous too. Although the list of ingredients seems long, you will find that they are all common, everyday ingredients that you are sure to find in your kitchen. Preparation Time: 20 minutes. Cooking Time: 23 minutes. Serves 4. Soaking time: 30 minutes. 2 cups rough chopped spinach (palak) ½ cup long grained rice (basmati) ¼ cup yellow moong dal (split yellow gram) ½ tsp turmeric powder (haldi) Salt to taste 3 tbsp ghee 2 tsp garlic (lehsun) paste ½ tsp ginger (adrak) paste ¼ cup finely chopped onions ½ cup finely chopped tomatoes ½ tsp chilli powder ½ tsp garam masala 1 small stick cinnamon (dalchini) 2 cloves (laung / lavang) 1 cardamom (elaichi) 1 tsp cumin seeds (jeera) 6 curry leaves (kadi patta) 1 whole dry Kashmiri red chilli, broken into pieces 1 tbsp finely chopped garlic (lehsun) 1 tbsp finely chopped green chillies For serving Fresh curds (dahi) Papad 1. Combine the rice and dal in a deep bowl and soak it in enough water for 30 minutes. Drain well. Keep aside. 2. Drain well, combine the rice, dal, turmeric powder, salt and 1½ cups of water in a pressure cooker, mix well and pressure cook for 3 whistles. 3. Combine the spinach and 2 tbsp of water in a mixer and blend till smooth. Keep aside. 4. Allow the steam to escape before opening the lid. Keep aside. 5. Heat 2 tbsp of ghee in a deep non-stick pan, add the garlic and ginger paste and sauté on a medium flame for a few seconds. 6. Add the onions and tomatoes and sauté on a medium flame for 3 minutes, while stirring occasionally. 7. Add the spinach purée, chilli powder and garam masala, mix well and cook on a medium flame for 3 minutes, while stirring occasionally. 8. Add the cooked dal-rice mixture, 1½ cups of water and salt and, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally. Keep aside. 9. Heat the remaining 1 tbsp of ghee in a small non-stick pan, add the cinnamon, cloves, cardamom, cumin seeds , curry leaves, Kashmiri dry red chillies and sauté on a medium flame for 1 minute. 10. Add the garlic and green chillies and sauté on a medium flame for 30 seconds. 11. Pour the tempering over the palak khichdi and mix well. Serve hot with fresh curds and papad.

Since the batter requires no fermentation, this recipe is a quick-fix! Preparation Time: 5 minutes Cooking Time: 10 minutes Makes 12 servings Ingredients For The Batter 1 cup semolina (rava) 1/4 cup curds (dahi) 1 tbsp chopped coriander (dhania), optional salt to taste 3/4 tsp fruit salt Other Ingredients 1 tsp oil 1/2 tsp ghee 1/2 tsp mustard seeds ( rai / sarson) 1 tsp urad dal (split black lentils) 1 tbsp broken cashewnuts (kaju) 4 curry leaves (kadi patta) 1/2 tsp cumin seeds (jeera) 2 tsp finely chopped green chillies a pinch asafoetida (hing) oil for greasing For Serving sambhar coconut chutney Method For the batter 1.Combine all ingredients together, except the fruit salt, with 1 cup of water in a deep bowl, mix well and keep aside for 10 minutes. How to proceed 1. Heat the oil and ghee in a small non-stick pan, add the mustard seeds, urad dal,cashewnuts, curry leaves, cumin seeds, green chilies and asafoetida, mix well and sauté on a medium flame for 2 minutes. 2. Add this tempering to the prepared semolina batter and mix well. 3. Just before steaming, add the fruit salt and 2 of tsp water over the batter. 4. When the bubbles form, mix gently. 5. Pour a little batter into each greased idli mould and steam for 7 to 8 minutes or till the idlis are cooked. 6. Cool slightly, demould and serve immediately with sambhar and coconut chutney.

Divide the dough into 20 equal portions and roll out each portion into a circle of about 75 mm. (3") diameter. 3. Grease a baking tray using oil, place 6 to 8 puris at a time on it and prick all over using a fork. 4. Bake in a pre-heated oven at 180°c (360°f) for 15 to 20 minutes or till the puris are golden brown, turning them once in between. 5. Repeat with the remaining dough to make more puris in 2 more batches. 6. Cool and store in an air-tight container.

This Rava Toast capitalises on these wonderful qualities of semolina. A mixture of semolina with finely chopped veggies is used as a topping on wheat bread slices, and the whole arrangement is toasted till perfectly crisp. A dash of curds lends a bit of tang to the recipe, and also helps roasting, while a sprinkling of chilli powder adds some spice to this recipe. Preparation Time: 10 minutes. Cooking Time: 15 minutes. Makes 4 toasts. For the topping ¼ cup semolina (rava/sooji) 2 tbsp finely chopped onions 2 tbsp finely chopped capsicum 2 tbsp finely chopped tomatoes 1 tbsp finely chopped coriander (dhania) 2 tbsp curds (dahi) ¼ tsp chilli powder Salt to taste Other ingredients 4 whole wheat bread slices Oil for greasing and cooking For serving Tomato ketchup For the topping 1. Combine all ingredients in a deep bowl and mix well. 2. Divide the mixture into 4 equal portions and keep aside. How to proceed 1. Place all the bread slices on a clean, dry surface and spread a portion of the topping evenly over it. 2. Heat a non-stick tava (griddle) and grease it with little oil. Place 2 open toasts on it with the topping side facing downwards and cook it on a medium flame using a little oil, till the topping turns golden brown in colour. 3. Turnover and cook on the other side till they turn golden brown in colour. 4. Cut each toasts diagonally into 2 equal pieces. 5. Repeat steps 2 to 4 to cook 2 more toasts.

Preparation Time: 10 minutes Cooking Time: 5 minutes Makes 4 servings Ingredients For The Curry 3/4 cup green curry paste , recipe below 1 1/2 cups coconut milk (nariyal ka doodh) 1 tbsp oil 1/4 cup paneer (cottage cheese) cubes 1/2 cup capsicum cubes 1/2 cup sliced baby corn 1/2 cup boiled green peas 3/4 cup parboiled cauliflower florets 1/2 cup thickly sliced mushrooms (khumbh) a pinch of sugar salt to taste For The Green Curry Paste (makes Approx. 1 Cup) 2 tbsp finely chopped lemon grass (hare chai ki patti) stem 1 cup chopped coriander (dhania) 1/4 cup roughly chopped onions 1 tbsp roughly chopped garlic (lehsun) 10 green chillies , roughly chopped 1 tbsp coriander (dhania) powder 2 tbsp cumin seeds (jeera) powder 1/2 tsp freshly ground black peppercorns (kalimirch) 25 ginger (adrak) salt to taste 1/2 tsp lemon juice 1/4 tsp grated lemon rind For Serving steamed rice (chawal) Method For the green curry paste 1. Combine all the ingredients and blend in a mixer to a fine paste, using enough water (approx. ½ cup). Keep aside. How to proceed 1. Heat the oil in a broad non-stick pan, add the green curry paste and sauté on a medium flame for 1 minute. 2. Add the paneer, capsicum, babycorn, green peas, cauliflower and mushrooms, mix well and sauté on a medium flame for 1 minute. 3. Add the coconut milk, mix well and cook on a medium flame for 2 minutes. 4. Add the sugar and salt, mix well and cook on a medium flame for 1 more minute. 5. Serve hot with steamed rice. Tips 1. You can use any vegetables of your choice.

Divide the stuffing into 4 equal portions. 2. Place 2 bread slices on a clean, dry surface and spread ½ tsp of butter evenly over each slice. 3. Place a portion of the stuffing on one buttered bread slice and spread it evenly. 4. Sandwich it using another bread slice with the buttered side facing downwards and press it lightly. 5. Brush ½ tsp of butter evenly over it. 6. Heat a non-stick a tava (griddle), put ½ tsp of butter for cooking and place the sandwich on it with the buttered side facing upwards and cook on a medium flame till it turns golden brown in color from both the sides. 7. Cut the sandwich diagonally into 2 equal portions. 8. Repeat steps 2 to 7 to make 3 more sandwiches. 9. Serve immediately with tomato ketchup.

Moreover, it is a satiating one-dish meal, which is completely worth the effort. Here, rice is boosted with colourful veggies, ketchup and appropriate seasonings; layered with refried beans, sour cream and uncooked salsa; and finally garnished with cheese and other ingredients; before topping with crushed nacho chips, to make a totally irresistible one-dish meal. Refried beans is a staple accompaniment in Mexican cuisine and is readily available at stores, but making it fresh at home with tomatoes, spring onions and cooked rajma, gives an awesome flavour that beats any packaged option! Assemble each serving of the Burrito Bowl separately so that everybody gets an equal share of the goodies, and enjoy it immediately upon preparation. Preparation Time: 30 minutes. Cooking Time: 11 minutes. Serves 4. For the rice 2½ cups cooked long grained rice (basmati) 2 tbsp oil 2 tsp finely chopped garlic (lehsun) 2 tsp dry red chilli flakes ½ cup sliced onions ¾ cup coloured capsicum (red, yellow and green) ½ cup boiled sweet corn kernels (makai ke dane) 2 tbsp tomato ketchup Salt to taste For the refried beans 1½ cups soaked, boiled and coarsely mashed rajma (kidney beans) 1 tbsp oil 1 tsp finely chopped garlic (lehsun) 2 tsp dry red chilli flakes ½ cup finely chopped spring onion (whites and greens) 1 cup chopped tomatoes ¼ cup tomato ketchup ½ tsp chilli powder, optional Salt to taste To be mixed into sour cream 1 cup hung curds (dahi) 2 tsp lemon juice Salt and freshly ground black pepper (kalimirch) to taste For the uncooked salsa 1 cup finely chopped tomatoes ½ cup finely chopped onions 1 tsp dry red chilli flakes 1 tbsp finely chopped coriander (dhania), optional Salt to taste Other ingredients 2 tbsp finely chopped spring onion (whites and greens) 4 tbsp grated processed cheese 1 cup coarsely crushed nacho chips For the rice 1. Heat the oil in a broad non-stick pan, add the garlic and sauté on a medium flame for a few seconds. 2. Add the chilli flakes and onions and sauté on a medium flame for 1 minute. 3. Add the capsicum and sauté on a medium flame for 1 minute. 4. Add the corn and sauté on a medium flame for a few seconds. 5. Add the rice, tomato ketchup and salt, mix gently and cook on a medium flame for 2 minutes, while stirring occasionally. Keep aside. For the refried beans 1. Heat the oil in a broad non-stick pan, add the garlic and chilli flakes and sauté on a medium flame for a few seconds. 2. Add the spring onion and sauté on a medium flame for 1 minute. 3. Add the tomatoes, mix well and cook on a medium flame for 2 minutes, while mashing them slightly with the back of the spoon. 4. Add the tomato ketchup, rajma, chilli powder, salt and 1 tbsp of water, mix wel land cook on a medium flame for 2 minutes, while stirring occasionally. Keep aside. For the uncooked salsa Combine all the ingredients in a deep bowl and mix well while mashing it with a back of a spoon. Keep aside. How to proceed 1. Divide the rice into 4 equal portions. Keep aside. 2. Divide the refried beans into 4 equal portions. Keep aside. 3. Divide the sour cream into 4 equal portions. Keep aside. 4. Divide the uncooked salsa into 4 equal portions. Keep aside. 5. Just before serving, take a big serving bowl, place a portion of the rice and press it lightly using the back of a spoon. 6. Top it with a portion of the refried beans and again press it lightly with the back of a spoon. 7. Put a portion of the sour cream and spread it evenly using the back of a spoon. 8. Spread a portion of the uncooked salsa and spread it evenly. 9. Finally sprinkle ½ tbsp of spring onion whites and greens evenly over it, 1 tbsp grated cheese and ¼ cup coarsely crushed nacho chips. 10. Repeat steps 5 to 9 to make 3 more servings. Serve immediately.

How many of you remember taking Monaco biscuits sandwiched with cheese and pineapple in your snack box when you were kids? Well, here is another awesome recipe that both kids and adults will enjoy. It is so easy that kids can even try and make it themselves. The Stuffed Monaco Biscuit Sev Puri is quite innovative, and involves sandwiching the biscuits with a peppy potato mixture and coating it in crunchy sev. This sev puri with a twist can be served as a starter at parties. When making the stuffing make sure you mash and mix it well with your hands, to ensure proper application on the biscuit. Munch them at anytime of the day when hunger strikes. Preparation Time: 5 minutes Baking time: 35 to 40 minutes. Baking Temperature: 180°C (360°F) Makes 30 chaklis. Ingredients 1 cup rice flour (chawal ka atta) 1/2 cup low-fat curds (dahi) 2 tsp sesame seeds (til) 1 tsp chilli powder a pinch of asafoetida (hing) , optional salt to taste 1 tsp oil Method 1. Combine all the ingredients in a bowl, mix well and knead into a semi-soft dough using enough water. 2. Put the mixture into a chakli press and press out round swirls of the dough onto a greased baking tray, working closely from the centre to the outside to the swirls (approximately 50 mm. (2") diameter). You will get about 30 chaklis. 3. Bake these chaklis in a pre-heated oven at 180°c (360°f) for 30 to 35 minutes, turning all the chaklis once after 15 to 20 minutes. 4. Cool and store in an air-tight container. Handy tip : 1. Adding 1 tbsp of oil instead of 1 tsp in this recipe reduces the cooking to 25 minutes and also makes the chakli a little softer.

They make a particularly wholesome and light breakfast. Add sprouted moong and spinach to add colour and make them more nourishing. Preparation Time: 10 minutes. Cooking Time: 12 minutes. Makes 12 pieces. 1 cup sprouted moong (whole green gram) ½ cup finely chopped spinach (palak) 3 green chillies, roughly chopped Salt to taste 2 tbsp besan (Bengal gram flour) 1 tsp fruit salt 1 tbsp oil 1 tsp sesame seeds (til) ½ tsp asafoetida (hing) 3 to 4 curry leaves (kadi patta) 1 tsp finely chopped green chillies Oil for greasing For serving Green chutney 1. Combine the sprouted moong, spinach and green chillies and blend in a mixer using a little water to a smooth paste. 2. Transfer the paste into a bowl, add the salt, besan along with ¼ cup water and mix well to make a batter of pouring consistency. 3. Just before steaming, add the fruit salt and 2 tsp of water over the batter. 4. When the bubbles form, mix gently. 5. Pour the batter into a greased 175 mm. (7") diameter thali and shake the thali clockwise to spread the batter in an even layer. 6. Steam in a steamer for 10 to 12 minutes or till the dhoklas are cooked. 7. Heat the oil in a small non-stick pan and add the sesame seeds, asafoetida, curry leaves and green chillies and sauté on a medium flame for few seconds. 8. Pour this tempering over the dhoklas, cool slightly and cut into equal diamond shaped pieces. Serve immediately with green chutney. Handy tip : Cool the dhoklas just for about 30 seconds, so that they can be easily cut into pieces.
