Serves 4. 1 tbsp lemon juice ¼ cup finely chopped coriander (dhania) 2 tsp oil 2 tsp finely chopped garlic (lehsun) 2 tsp finely chopped green chillies ¼ cup finely chopped onions ¼ cup finely chopped cabbage ¼ cup finely chopped carrots 3 cups basic vegetable stock Salt to taste 2 tsp cornflour dissolved in 2 tbsp water 1. Heat the oil in a deep non-stick pan, add the garlic and green chillies and sauté on a medium flame for a few seconds. 2. Add the onions and sauté on a medium flame for 1 to 2 minutes. 3. Add the cabbage and carrots and sauté on a medium flame for 1 minute. 4. Add the basic vegetable stock, lemon juice, salt and cornflour-water mixture, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally. 5. Add the coriander and mix well. Serve immediately.

Add cucumber, onions, curds and green chillies to otherwise bland jowar flour to create soft and tasty pancakes. Pair them with fresh green chutney for a great breakfast! Preparation Time: 7 minutes. Cooking Time: 7 minutes. Makes 7 mini pancakes. ½ cup jowar (white millet) flour ½ cup grated cucumber 2 tbsp finely chopped onions 1 tsp finely chopped green chillies Salt to taste 1 tbsp fresh curds (dahi) A pinch of turmeric powder (haldi) 1 tbsp finely chopped coriander (dhania) Oil for greasing and cooking For serving Green chutney 1. Combine all the ingredients along with approx. 5 to 7 tbsp of water in a deep bowl and mix well to make a batter of pouring consistency. 2. Grease a non-stick mini uttapa pan with a little oil. 3. Pour 2 tbsp of the batter in each of the uttapa moulds and spread it gently in a circular motion to make a round. 4. Cook using a little oil, till they turn brown in colour from both sides. Serve immediately with green chutney.

It is swiftly portioned out onto serving plates when the orders flow in, to appease the severest of hunger shots. Preparation Time: 10 minutes Cooking Time: 15 minutes Makes 4 plates Ingredients 3 tbsp butter 2 tsp cumin seeds (jeera) 1 1/2 tbsp chilli-garlic paste 1/4 cup finely chopped onions 1/4 cup finely chopped capsicum 1 cup finely chopped tomatoes 1/4 tsp turmeric powder (haldi) salt to taste 1 tsp chilli powder 2 tsp pav bhaji masala 2 1/2 cups cooked rice (chawal) 1/2 cup boiled green peas For The Garnish 2 tbsp finely chopped coriander (dhania) Method 1. Heat the butter on a large tava (griddle), add the cumin seeds. 2. When the seeds crackle, add the chilli-garlic paste, mix well and sauté on a medium flame for 1 to 2 minutes. 3. And the onions, mix well and sauté on a medium flame for another 1 to 2 minutes. 4. Add the capsicum, mix well and sauté on a medium flame for 2 more minutes. 5. Add the tomatoes, mix well and again cook on a medium flame for 3 to 4 minutes, while stirring occasionally. Preferably use a potato masher to mash the vegetables lightly. 6. Add the turmeric powder, salt, chilli powder, pav bhaji masala and 1/4 cup of water, mix welland cook on a medium flame for 1 to 2 minutes, while stirring occasionally. 7. Add the rice and green peas, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally. 8. Serve immediately garnished with coriander.

Add the prepared tomato pulp, oregano, chilli flakes, tomato ketchup, chilli powder and salt, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally. 6. Add the sugar, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally. 7. Store in an air- tight container and use as required.

The liquid that is left over after the butter has been removed is very delicious and cooling and makes a tasty drink. Soft paneer chunks are dunked into a rich tomato based gravy a must try for all paneer lovers! Preparation Time: 15 minutes Cooking Time: 25 minutes Makes 2 servings Ingredients For The Red Gravy 1 cup chopped tomatoes 1/2 cup sliced onions 1/4 cup cashewnuts (kaju) 2 whole dry kashmiri red chillies Other Ingredients 2 tbsp butter 1 tsp garlic (lehsun) paste 25 of cinnamon (dalchini) 2 cloves (laung / lavang) 2 cardamoms 1 bayleaf (tejpatta) 2 tsp dried fenugreek leaves (kasuri methi) 1 tsp garam masala 3 tbsp tomato puree salt to taste 2 tbsp whisked curds (dahi) 1/2 tsp sugar 2 tbsp fresh cream 1 cup paneer (cottage cheese) strips , cut into 1" x 1/4" For The Garnish 1 tbsp fresh cream Method For the red gravy 1. Combine all the ingredients along with 1 1/2 cups of water in a kadhai and boil on a high flame for 10 to 15 minutes or till the tomatoes are soft, while stirring occasionally. 2. Cool and blend in a mixer to a smooth paste. Keep aside. How to proceed 1. Heat the butter in a kadhai, add the garlic paste and sauté on a medium flame for a few seconds. 2. Add the cinnamon, cloves, cardamom and bayleaf and sauté on a medium flame for a few more seconds. 3. Add the dried fenugreek leaves, garam masala, tomato purée and red gravy and sauté on a medium flame for another 2 to 3 minutes, while stirring continuously. 4. Add the salt, mix well and cook on a medium flame for 1 to 2 minutes, while stirring continuously. 5. Add the curds, mix well and cook on a medium flame for 1 more minute. 6. Add the sugar, 1/4 cup of water, paneer and cream, mix well and cook on a medium flame for another 2 minutes. 7. Serve hot garnished with fresh cream.

Heat 1 tsp of oil in a non-stick pan, add the oats and ½ tsp of turmeric powder and sauté on a medium flame for 3 to 4 minutes or till it turns light brown in colour, stirring occasionally. Keep aside. 2. Heat the remaining 2 tsp of oil in a broad non-stick pan and add the mustard seeds. 3. When the seeds crackle, add the urad dal, curry leaves, red chillies and green chillies and sauté on a medium flame for 1 minute. 4. Add the onions and sauté on a medium flame for 1 minute or till the onions turn translucent. 5. Add the carrots and green peas and sauté on a medium flame for 2 minutes. 6. Add the oats mixture, sugar, salt and remaining ½ tsp of turmeric powder, mix well and cook on a medium flame for 1 minute, stirring continuously. 7. Add 1½ cups of hot water, cover and cook on a slow flame for 5 to 7 minutes, stirring occasionally. Serve immediately garnished with coriander. Almonds are toasted to bring out its complete flavour and to add crunch too. Besides being a protein-filled nut, it is also considered brain-friendly -- hence, you can build your body as well as nourish your brain with this tasty soup. Preparation Time: 15 minutes Cooking Time: 15 minutes Makes 3 servings Ingredients 1/2 cup finely chopped broccoli stalks 1 cup broccoli florets 1/4 cup finely chopped onions 1 tsp finely chopped garlic (lehsun) 1 tsp finely chopped celery salt to taste 1/2 tsp cornflour dissolved in 1/2 cup milk 1 tsp freshly ground black peppercorns (kalimirch) 1 tbsp roasted almond (badam) slivers For The Garnish 2 tsp roasted almond (badam) slivers Method 1. Heat 2 cups of water in a deep kadhai, add the broccoli stalks and cook on a medium flame for 4 to 5 minutes. 2. Add the broccoli florets, onions, garlic, celery and salt, mix well and cook for 5 minutes, while stirring occasionally. 3. Remove from the flame, allow it to cool a little. 4.Once slightly cooled, blend with a hand blender till smooth. 5. Transfer the prepared broccoli mixture into the same kadhai, add the cornflour-milk mixture, mix well and cook on a medium flame for 2 minutes, while stirring continuously. 6. Add the pepper powder, roasted almond slivers, mix well and cook on a medium flame for another 1 minute. 7. Serve hot garnished with almond slivers.

For a change, you could try sprinkling some on an open sandwich too! Preparation Time: 10 minutes. Cooking Time: 1 minute. Makes ½ cup. ¼ cup roughly chopped garlic (lehsun) 2 tsp oil ¼ cup grated dried coconut (kopra) ¼ cup chilli powder Salt to taste 1. Heat the oil in a small broad non-stick pan, add the garlic and sauté on a medium flame for 1 minute. 2. Switch off the flame, add the coconut and mix well. 3. Transfer the mixture into a plate and allow it to cool completely. 4. Once cooled, blend in a mixer along with the chilli powder and salt till smooth. Store in an air-tight container and refrigerate. The Schezuan Sauce is a common addition to several Chinese recipes including noodle and vegetable preparations. It can be made quite easily with readily available ingredients, and by preparing at home you can rest assured that no unnecessary chemicals have been added to it for preservation, flavour enhancement, etc. Preparation Time: 10 minutes. Cooking Time: 11 minutes. Makes 1 cup. For the chilli-garlic paste 20 whole dry Kashmiri red chillies ¼ cup chopped garlic (lehsun) Other ingredients 3 tbsp oil 1 tbsp finely chopped garlic (lehsun) 1 tsp finely chopped green chillies ½ tbsp finely chopped ginger (adrak) 2 tbsp finely chopped onions 1 tbsp cornflour dissolved in 2 tbsp water 1 tbsp vinegar 2 tsp sugar Salt to taste For the chilli-garlic paste 1. Boil 1 cup of water in a deep pan, add the dry red chillies and garlic, mix well and cook on a medium flame for 5 to 7 minutes, while stirring occasionally. Keep aside to cool. 2. Blend in a mixer to a smooth paste using approx. 1 tbsp of water. Keep aside. How to proceed 1. Heat the oil in a broad non-stick pan, add the garlic, green chillies, ginger, onions and sauté on a medium flame for 1 minute. 2. Add the prepared chilli-garlic paste, and ½ cup of water, mix well and cook on a medium flame for 1 more minute, while stirring occasionally. 3. Add the cornflour--water mixture, vinegar, sugar and salt, mix well and cook on a medium flame for 1 to 2 minutes, while stirring continuously. 4. Cool completely and keep refrigerated. Use as required.

Heat the butter in a broad non-stick pan, add the plain flour and cook on a slow flame for 1 to 2 minutes, while stirring continuously. 2. Add the milk, mix well and cook on a medium flame for 3 to 4 minutes, or till the sauce thickens, while stirring continuously. 3. Add the salt and pepper, mix well and cook on a medium flame for 1 more minute. 4. Store in an air-tight container and use as required. How to proceed 1. Heat the butter in a broad non-stick pan, add the mixed vegetables and sauté on a medium flame for 2 minutes. 2. Add the white sauce, salt and pepper powder, mix well and cook on a medium flame for 3 minutes, while stirring occasionally. 3. Transfer the mixture into a baking dish, sprinkle the cheese evenly over it and bake in a pre-heated oven at 200°C (400°F) for 15 minutes. Serve immediately.

Moreover, it is a satiating one-dish meal, which is completely worth the effort. Here, rice is boosted with colourful veggies, ketchup and appropriate seasonings; layered with refried beans, sour cream and uncooked salsa; and finally garnished with cheese and other ingredients; before topping with crushed nacho chips, to make a totally irresistible one-dish meal. Refried beans is a staple accompaniment in Mexican cuisine and is readily available at stores, but making it fresh at home with tomatoes, spring onions and cooked rajma, gives an awesome flavour that beats any packaged option! Assemble each serving of the Burrito Bowl separately so that everybody gets an equal share of the goodies, and enjoy it immediately upon preparation. Preparation Time: 30 minutes. Cooking Time: 11 minutes. Serves 4. For the rice 2½ cups cooked long grained rice (basmati) 2 tbsp oil 2 tsp finely chopped garlic (lehsun) 2 tsp dry red chilli flakes ½ cup sliced onions ¾ cup coloured capsicum (red, yellow and green) ½ cup boiled sweet corn kernels (makai ke dane) 2 tbsp tomato ketchup Salt to taste For the refried beans 1½ cups soaked, boiled and coarsely mashed rajma (kidney beans) 1 tbsp oil 1 tsp finely chopped garlic (lehsun) 2 tsp dry red chilli flakes ½ cup finely chopped spring onion (whites and greens) 1 cup chopped tomatoes ¼ cup tomato ketchup ½ tsp chilli powder, optional Salt to taste To be mixed into sour cream 1 cup hung curds (dahi) 2 tsp lemon juice Salt and freshly ground black pepper (kalimirch) to taste For the uncooked salsa 1 cup finely chopped tomatoes ½ cup finely chopped onions 1 tsp dry red chilli flakes 1 tbsp finely chopped coriander (dhania), optional Salt to taste Other ingredients 2 tbsp finely chopped spring onion (whites and greens) 4 tbsp grated processed cheese 1 cup coarsely crushed nacho chips For the rice 1. Heat the oil in a broad non-stick pan, add the garlic and sauté on a medium flame for a few seconds. 2. Add the chilli flakes and onions and sauté on a medium flame for 1 minute. 3. Add the capsicum and sauté on a medium flame for 1 minute. 4. Add the corn and sauté on a medium flame for a few seconds. 5. Add the rice, tomato ketchup and salt, mix gently and cook on a medium flame for 2 minutes, while stirring occasionally. Keep aside. For the refried beans 1. Heat the oil in a broad non-stick pan, add the garlic and chilli flakes and sauté on a medium flame for a few seconds. 2. Add the spring onion and sauté on a medium flame for 1 minute. 3. Add the tomatoes, mix well and cook on a medium flame for 2 minutes, while mashing them slightly with the back of the spoon. 4. Add the tomato ketchup, rajma, chilli powder, salt and 1 tbsp of water, mix wel land cook on a medium flame for 2 minutes, while stirring occasionally. Keep aside. For the uncooked salsa Combine all the ingredients in a deep bowl and mix well while mashing it with a back of a spoon. Keep aside. How to proceed 1. Divide the rice into 4 equal portions. Keep aside. 2. Divide the refried beans into 4 equal portions. Keep aside. 3. Divide the sour cream into 4 equal portions. Keep aside. 4. Divide the uncooked salsa into 4 equal portions. Keep aside. 5. Just before serving, take a big serving bowl, place a portion of the rice and press it lightly using the back of a spoon. 6. Top it with a portion of the refried beans and again press it lightly with the back of a spoon. 7. Put a portion of the sour cream and spread it evenly using the back of a spoon. 8. Spread a portion of the uncooked salsa and spread it evenly. 9. Finally sprinkle ½ tbsp of spring onion whites and greens evenly over it, 1 tbsp grated cheese and ¼ cup coarsely crushed nacho chips. 10. Repeat steps 5 to 9 to make 3 more servings. Serve immediately.

Now make soft, delectable rotis for dinner and watch your loved ones devour them with joy. Its simple to make, and an extremely satisfying meal. Go for it! Preparation Time: 5 minutes Cooking Time: 15 minutes Makes: 8 rotis 1 cup whole wheat flour (gehun ka aata) 1½ tbsp oil A pinch of salt (optiona) Whole wheat flour (gehun ka aata) for tolling Ghee for smearing 1. Combine the flour, 1 tbsp of oil and salt in a bowl and knead into a soft dough using enough water. Keep aside for 15 to 20 minutes. 2. Knead again using remaining ½ tbsp of oil and little water till the dough is smooth and elastic. Cover and keep the dough aside for 15 to 20 minutes. 3. Divide the dough into 8 equal portions and roll out each portion of the dough into a thin circle of 150 mm. (6") diameter using a little whole wheat flour for rolling. 4. Heat a non-stick tava (griddle) on a high flame and when hot, place the roti gently over it. 5. Cook it till small blisters appear on the surface. Turn over the roti and cook for few more seconds. 6. Cook it on an open flame till it puffs up and brown spots appear on both the sides. 7. Repeat with the remaining dough portions to make 7 more rotis. Smear ghee on top and serve hot.

Actual risotto is made using arboria rice but you can also use basmati rice, it taste the same. . . This rice prepartion is cheesy, colorful and fun to eat. . Serve it with garlic bread. . Preparation Time: 10 minutes Cooking Time: 8 minutes Baking Time: 10 to 15 minutes. Baking Temperature: 200°C (400°F) Makes 3 servings Ingredients 1 1/2 cups boiled long grained rice (basmati) 2 tbsp butter 1/4 cup finely chopped onions 1/2 cup finely chopped coloured capsicum 1 1/4 cups milk 3 tbsp fresh cream 3/4 cup grated processed cheese salt and freshly ground black pepper powder to tatse Method 1. Heat the butter in a broad non-stick pan, add the onions and sauté on a medium flame for 1 to 2 minutes or till they turn translucent. 2. Add the capsicum and sauté on a medium flame for 1 to 2 minutes or till the capsicum becomes soft. 3. Add the rice, milk, cream, salt, pepper and ¼ cup of cheese, mix well and cook on a medium flame for 3 to 4 minutes, while stirring occasionally using a potato masher. 4. Pour the mixture in a baking dish and spread it evenly using a spoon and sprinkle the remaining 1/2 cup of cheese on top. 5. Bake in a pre-heated oven at 200°c (400°f) for 10 to 15 minutes. 6. Serve immediately.

Preparation Time: 10 minutes Cooking Time: 5 minutes Makes 4 servings Ingredients For The Curry 3/4 cup green curry paste , recipe below 1 1/2 cups coconut milk (nariyal ka doodh) 1 tbsp oil 1/4 cup paneer (cottage cheese) cubes 1/2 cup capsicum cubes 1/2 cup sliced baby corn 1/2 cup boiled green peas 3/4 cup parboiled cauliflower florets 1/2 cup thickly sliced mushrooms (khumbh) a pinch of sugar salt to taste For The Green Curry Paste (makes Approx. 1 Cup) 2 tbsp finely chopped lemon grass (hare chai ki patti) stem 1 cup chopped coriander (dhania) 1/4 cup roughly chopped onions 1 tbsp roughly chopped garlic (lehsun) 10 green chillies , roughly chopped 1 tbsp coriander (dhania) powder 2 tbsp cumin seeds (jeera) powder 1/2 tsp freshly ground black peppercorns (kalimirch) 25 ginger (adrak) salt to taste 1/2 tsp lemon juice 1/4 tsp grated lemon rind For Serving steamed rice (chawal) Method For the green curry paste 1. Combine all the ingredients and blend in a mixer to a fine paste, using enough water (approx. ½ cup). Keep aside. How to proceed 1. Heat the oil in a broad non-stick pan, add the green curry paste and sauté on a medium flame for 1 minute. 2. Add the paneer, capsicum, babycorn, green peas, cauliflower and mushrooms, mix well and sauté on a medium flame for 1 minute. 3. Add the coconut milk, mix well and cook on a medium flame for 2 minutes. 4. Add the sugar and salt, mix well and cook on a medium flame for 1 more minute. 5. Serve hot with steamed rice. Tips 1. You can use any vegetables of your choice.

Oats are rich in the beta-glucan enzyme which helps to lower blood cholesterol and glucose levels, while carrots and spinach are an excellent source of vitamin A. Preparation Time: 10 minutes. Cooking Time: 15 minutes. Makes 5 pancakes. 1 cup oats flour ½ cup grated carrot ½ cup finely chopped spinach (palak) 2 tbsp finely chopped coriander (dhania) 2 tsp finely chopped green chillies Salt to taste ½ tsp fruit salt 1½ tsp oil for greasing and cooking For serving Dahiwali phudina ki chutney 1. Combine all the ingredients, except the fruit salt, along with 1 cup of water in a deep bowl and mix well to form a batter of dropping consistency. 2. Just before making the pancakes, sprinkle the fruit salt and 2 tsp of water over the batter. 3. When the bubbles form, mix gently. 4. Heat a non-stick tava (griddle) and grease it using ¼ tsp oil. 5. Pour a spoonful of the batter on it and spread in a circular motion to make 100 mm. (4") thick round. 6. Cook, using ¼ tsp of oil, till it turns light brown in colour from both sides. 7. Repeat with the remaining batter to make 4 more pancakes. Serve immediately with dahiwali phudina ki chutney. Rice khichu, Gujarat is known for its many snacks that are a treat to the palate even while being friendly to the stomach! here is another easy to make, easily digestible afternoon snack from the kitchens of gujarat. However, serving it in the traditional way with oodles of raw oil can turn this healthy snack into a non-healthy one. Serve it by shaping with an interesting mould and top it with the sauce. Khichu remains soft when hot, hence, true to the name, relish it steaming hot. While adding flour, be quick in stirring to avoid the formation of lumps. Preparation Time: 15 minutes. Cooking Time: 8 minutes. Serves: 4. For the khichu 1 cup rice flour (chawal ka atta) A pinch of soda bi-carb ½ tsp crushed cumin seeds (jeera) ½ tsp finely chopped green chillies Salt to taste 1 tbsp oil For the sauce 3 tbsp oil 1 tbsp finely chopped garlic (lehsun) 1 tsp chilli powder A pinch of salt For the khichu 1. Put 3 cups of hot water in a deep non-stick pan, add the soda bi-carb, crushed cumin seeds, green chillies, salt, rice flour and oil, mix well and cook on a medium flame for 1 to 2 minutes, while stirring continuously with help of a rolling pin. 2. Cover and cook on a slow flame for 5 minutes, while stirring occasionally. Keep aside. For the sauce 1. Heat the oil in a small pan, add the garlic and sauté on a slow flame till it releases flavour. 2. Remove from the flame, add the chilli powder and salt and mix well. Keep aside. How to proceed 1. Put the khichu in a bowl, pour a little of the sauce over it and serve immediately.

Serves 2. 3 cups roughly torn bread pieces 2 tbsp oil 2 tsp mustard seeds (rai/ sarson) 6 to 7 curry leaves (kadi patta) 1 tsp finely chopped ginger (adrak) 1 tsp finely chopped garlic (lehsun) 2 tsp finely chopped green chillies ½ cup finely chopped onions 1 cup finely chopped tomatoes ½ tsp turmeric powder (haldi) 1 tsp chilli powder 1½ tbsp tomato ketchup 2 tsp lemon juice Salt to taste 2 tbsp finely chopped coriander (dhania) 1. Heat the oil in a broad non-stick pan and add the mustard seeds. 2. When the seeds crackle add the curry leaves, ginger, garlic, green chilies and onion and sauté on a medium flame for 1 to 2 minutes. 3. Add the tomatoes, turmeric powder, chilli powder, 2 tbsp of water, mix well and cook on a medium flame for 2 to 3 minutes, while mashing lightly with the help of a ladle. 4. Add the tomato ketchup, lemon juice and salt, mix well and cook on a medium flame for 1 minute, while stirring continuously. 5. Add the bread, mix well and cook on a medium flame for 1 minute, while stirring continuously. 6. Switch off the flame, add the coriander and mix well. Serve hot.

Clean, wash and boil the yellow moong dal in 1 cup of water in a deep pan till the dal soft and cooked and all the water has evaporated. 2. Drain and blend the dal in a mixer to a coarse paste. 3. Transfer the paste into a bowl, add all the remaining ingredients and mix well. 4. Divide the mixture into 12 equal portions and shape each portion into a 63 mm. (2½") round flat tikki. 5. Lightly grease a non-stick tava (griddle) with ½ tsp of oil. 6. Cook each tikki using 1/8 tsp of oil, till they turn golden brown in colour from both the sides. 7. Topped off by an aromatic tempering, the Moong Dal Dhokla becomes a tongue-tickling snack, when matched with peppy green chutney. Preparation Time: 5 minutes Cooking Time: 15 minutes Makes 4 servings Ingredients For The Batter 3/4 cup yellow moong dal (split yellow gram), soaked for 3 to 4 hours and drained 3 green chillies salt to taste 1 1/2 tsp sugar a pinch of asafoetida (hing) 1 tbsp oil 1/2 tsp turmeric powder (haldi) 1 tbsp besan (bengal gram flour) 2 tbsp curds (dahi) 1 1/2 tsp fruit salt For The Tempering 1 tbsp oil 1/2 tsp mustard seeds ( rai / sarson) 1/2 tsp sesame seeds (til) a pinch asafoetida (hing) 2 tsp finely chopped green chillies For The Garnish 1 tbsp finely chopped coriander (dhania) For Serving green chutney 1 tbsp grated coconut Method 1. Combine the yellow moong dal and green chillies and blend in a mixer using a little water to make a paste of pouring consistency. 2. Transfer the paste to a bowl, add the salt, sugar, asafoetida, oil, turmeric powder, besan and curds and mix well to make a batter. 3. Just before steaming, sprinkle fruit salt and mix lightly. 4. Pour the batter into a greased 175 mm. (7") diameter thali. 5. Steam in a steamer for 10 to 12 minutes or till the dhokalas are cooked. Keep aside. 6. Heat the oil in a small non-stick pan and add the mustard seeds. 7. When the mustard seeds crackle, add the sesame seeds, asafoetida and sauté on a medium flame for 30 seconds. 8. Add the green chillies and sauté on a medium flame for 30 seconds. 9. Pour the tempering over the prepared dhoklas and spread it evenly. 10. Sprinkle the coriander and coconut evenly on top. 11. Cut into pieces and serve hot with green chutney.

Makes ¾ cup. 3 tbsp cloves (laung / lavang) ¼ cup cardamom (elaichi) 1½ tbsp black peppercorns (kalimirch) 2 sticks cinnamon (dalchini) ¼ cup dried ginger powder (soonth) 1 tsp nutmeg (jaiphal) powder 1. Combine the cloves, cardamom, black peppercorns and cinnamon in a broad non-stick pan and dry roast on a medium flame for 1 minute. 2. Transfer into a plate and keep aside to cool completely. 3. Once cooled, add the dried ginger powder, nutmeg powder and blend in a mixer to a smooth powder. 4. Store in an air-tight container and use as required. (2") cubes 1/2 cup thick curds (dahi) 1 1/2 tsp finely chopped ginger (adrak) 2 tsp garlic (lehsun) paste 1 tsp chilli powder 2 tsp dry fenugreek leaves 1/2 tsp garam masala 1 tbsp finely chopped coriander (dhania) salt to taste 5 tsp oil for greasing and cooking 1 tsp chaat masala For Serving mint chutney Method 1. Combine the curds, ginger, garlic, chilli powder, dry fenugreek leaves, garam masala, coriander, salt and oil in a bowl and mix well till the mixture is smooth. 2. Add the paneer cubes and capsicum cubes, toss well and keep aside for 30 minutes to marinate. 3. Thread a piece of paneer followed by capsicum and finally by one more piece of paneer on a tooth pick. 4. Repeat with the remaining ingredients to make 6 more tikkas. 5. Grease a non-stick tava (griddle) with 2 tsp of oil. 6. Place the prepared tikka on the tava (griddle) and cook on a medium flame, using the remaining 1 tsp oil till they are golden brown in colour from all the sides. 7. Sprinkle a little chaat masala over the tikkas. 8. Serve immediately with pudhina chutney.

These baked puris moreover provide for iron and calcium in your diet. These also make a great snack in your first trimester and can easily find place in a low calorie diabetic menu as well. Preparation Time: 10 minutes Baking time: 50 to 60 minutes. Baking Temperature: 180°C (360°F). Makes 20 puris Ingredients 1 cup whole wheat flour (gehun ka atta) 1/2 cup finely chopped fenugreek (methi) 1/2 tsp turmeric powder (haldi) 1 tsp chilli powder 1 tsp coriander-cumin seeds (dhania-jeera) powder 2 tsp oil salt to taste 1/2 tsp oil for greasing Method 1. Combine all the ingredients in a bowl and knead into a stiff dough using enough water. Keep aside for 10 to 15 minutes. 2. Divide the dough into 20 equal portions and roll out each portion into a circle of about 75 mm. (3") diameter. 3. Grease a baking tray using oil, place 6 to 8 puris at a time on it and prick all over using a fork. 4. Bake in a pre-heated oven at 180°c (360°f) for 15 to 20 minutes or till the puris are golden brown, turning them once in between. 5. Repeat with the remaining dough to make more puris in 2 more batches. 6. Cool and store in an air-tight container.

This oats rava palak dhokla is a thoroughbred zero-oil recipe that does not even use oil for greasing. Amaze your family with these innovative dhoklas, which is so tasty that everybody will be astonished when you tell them it's made of oats! Preparation time: 5 minutes. Cooking time: 7 minutes. Makes 20 pieces. Ingredients ½ cup coarsely powdered quick cooking rolled oats ½ cup semolina (rava / sooji) ¼ cup fresh low-fat curds (dahi) ½ tsp green chilli paste Salt to taste ½ cup chopped spinach (palak) ½ tsp fruit salt Method 1. Combine the oats, semolina, curds, green chilli paste, salt and ¾ cup of water in a deep bowl, mix well and keep aside for 15 minutes. 2. Add the spinach and 2 tbsp of water and mix well to make a batter of dropping consistency. 3. Just before steaming, add the fruit salt and 2 tbsp of water over it. 4. When the bubbles form, mix gently. 5. Pour the batter into a 200 mm. (8") diameter thali and shake the thali clockwise to spread the batter in an even layer. 6. Steam in a steamer for 7 minutes or till the dhoklas are cooked. 7. Keep aside to cool for 3 to 4 minutes and cut into diamond shaped equal sized pieces. Serve immediately. Handy tip : For ½ cup of powdered oats, blend ¾ cup of quick cooking rolled oats in a mixer.

Makes ¾ cup. 2½ tbsp split fenugreek seeds (methi na kuria) 1 cup split mustard seeds (rai na kuria) ¼ cup oil ½ cup chilli powder ¼ tsp turmeric powder (haldi) 1 tsp asafoetida (hing) ¼ cup salt 1. Heat the oil in a small broad non-stick pan on a medium flame for 2 minutes. Keep aside to cool slightly. 2. Blend the split fenugreek seeds in a mixer to a coarse powder. Transfer into a bowl and keep aside. 3. Blend the split mustard seeds in a mixer to a coarse powder. 4. Combine the split mustard seeds, split fenugreek seeds, chilli powder, turmeric powder, asafoetida and salt in a deep bowl and mix well. 5. Add the oil and mix well. Store in an air-tight container and use as required.

Cool and store in an air-tight container. Handy tip : 1. Adding 1 tbsp of oil instead of 1 tsp in this recipe reduces the cooking to 25 minutes and also makes the chakli a little softer.

Pour a ladleful of the batter on it and press gently with the help of the back of the spoon and spread to make a 100 mm. (4") diameter circle. 4. Cook the poodla using a little oil, till both sides turn golden brown in colour. 5. Repeat steps 2 to 4 to make 9 more poodlas. Serve hot with green chutney or tomato ketchup.

Makes 21 pieces. 5 large riped guava, cut it into halves 2 cups sugar 1 tbsp ghee 1 tbsp lemon juice 1. Combine the guava and 1 cup of water in a pressure cooker and pressure cook for 1 whistle. 2. Allow the steam to escape before opening the lid, drain well and cool completely. 3. Put the cooked guava pieces in a mixer and blend till smooth. 4. Put the mixture in a strainer and strain with a help of a spoon to remove the pulp. 5. Remember to measure the pulp. The pulp and sugar ratio should be 1:1. 6. Combine the pulp, sugar, ghee and lemon juice in a broad non-stick pan, mix well and cook on a medium flame for 20 to 22 minutes, while stirring continuously. 7. Transfer the mixture in a greased rectangle aluminium tray of 250mm. (10") by 150mm. (6"). 8. Keep aside for 2 hours and cut into 21 equal pieces using a sharp knife. Blanch the spinach in a vesselful of boiling water for 2 to 3 minutes. 2. Drain, refresh with cold water and keep aside to cool for sometime. 3. Blend in a mixer to a smooth purée and keep aside. 4. Heat the oil in a kadhai , add the onions and sauté on a medium flame till they turn translucent. 5. Add the garlic, ginger, green chillies and turmeric powder and sauté on a medium flame for 1 to 2 minutes. 6.Add the tomato pulp and sauté till the mixture leaves oil, while stirring continuously. 7.Add the spinach purée and 2 tbsp of water, mix well and cook on a medium flame for 2 minutes. 8. Add the salt, garam masala and fresh cream and mix well. 9. Add the paneer, mix gently and cook on a medium flame for another 1 to 2 minutes. 10. Serve hot. Handy tip: 1. 4 bunches of spinach will approximately yield 10 cups of chopped spinach.

How to proceed 1. Heat the oil and ghee in a small non-stick pan, add the mustard seeds, urad dal,cashewnuts, curry leaves, cumin seeds, green chilies and asafoetida, mix well and sauté on a medium flame for 2 minutes. 2. Add this tempering to the prepared semolina batter and mix well. 3. Just before steaming, add the fruit salt and 2 of tsp water over the batter. 4. When the bubbles form, mix gently. 5. Pour a little batter into each greased idli mould and steam for 7 to 8 minutes or till the idlis are cooked. 6. Cool slightly, demould and serve immediately with sambhar and coconut chutney.

Ingredients 2 cups coconut milk (nariyal ka doodh) 1 tbsp cornflour dissolved in 2 tbsp coconut milk (nariyal ka doodh) 1 tbsp oil 2 tbsp finely chopped basil leaves Salt to taste 1 cup blanched babycorn, cut diagonally 1 cup blanched broccoli ½ cup paneer (cottage cheese) cubes Salt to taste To be blended into a smooth red curry paste (using enough water) 10 whole dry Kashmiri red chilles, soaked in warm water for 15 minutes and drained ¾ cup roughly chopped onions 2 tbsp coriander (dhania) seeds 1 tbsp cumin seeds (jeera) powder 1 tbsp grated ginger (adrak) 1 tbsp finely chopped coriander (dhania) 5 cloves garlic (lehsun) 2 tsp grated lemon rind ¼ cup finely chopped lemongrass (hare chai ki patti) ½ tsp white peppercorn powder Salt to taste Method 1. Heat the oil in a broad non-stick pan, add 5 to 6 tbsp of the red curry paste and cook on a medium flame for 1 minute. 2. Add the basil and cook on a medium flame for 1 minute. 3. Add the coconut-milk , cornflour-coconut milk mixture and salt, mix well and cook on a medium flame for another 5 to 6 minutes, while stirring continuously. 4. Add the babycorn, broccoli and paneer, mix well and cook on a medium flame for 2 more minutes. Serve hot.

Divide the stuffing into 4 equal portions. 2. Place 2 bread slices on a clean, dry surface and spread ½ tsp of butter evenly over each slice. 3. Place a portion of the stuffing on one buttered bread slice and spread it evenly. 4. Sandwich it using another bread slice with the buttered side facing downwards and press it lightly. 5. Brush ½ tsp of butter evenly over it. 6. Heat a non-stick a tava (griddle), put ½ tsp of butter for cooking and place the sandwich on it with the buttered side facing upwards and cook on a medium flame till it turns golden brown in color from both the sides. 7. This Rava Toast capitalises on these wonderful qualities of semolina. A mixture of semolina with finely chopped veggies is used as a topping on wheat bread slices, and the whole arrangement is toasted till perfectly crisp. A dash of curds lends a bit of tang to the recipe, and also helps roasting, while a sprinkling of chilli powder adds some spice to this recipe. Preparation Time: 10 minutes. Cooking Time: 15 minutes. Makes 4 toasts. For the topping ¼ cup semolina (rava/sooji) 2 tbsp finely chopped onions 2 tbsp finely chopped capsicum 2 tbsp finely chopped tomatoes 1 tbsp finely chopped coriander (dhania) 2 tbsp curds (dahi) ¼ tsp chilli powder Salt to taste Other ingredients 4 whole wheat bread slices Oil for greasing and cooking For serving Tomato ketchup For the topping 1. Combine all ingredients in a deep bowl and mix well. 2. Divide the mixture into 4 equal portions and keep aside. How to proceed 1. Place all the bread slices on a clean, dry surface and spread a portion of the topping evenly over it. 2. Heat a non-stick tava (griddle) and grease it with little oil. Place 2 open toasts on it with the topping side facing downwards and cook it on a medium flame using a little oil, till the topping turns golden brown in colour. 3. Turnover and cook on the other side till they turn golden brown in colour. 4. Cut each toasts diagonally into 2 equal pieces. 5. Repeat steps 2 to 4 to cook 2 more toasts.
