In this tutorial I share with you for which products you need to use an antioxidant and in which products you have to use a preservative, what you should know when choosing a preservative, which criteria you should follow when choosing one and what it's important to consider when using specific preservatives and other useful information ;) When deciding which preservative is the most appropriate for your product, there is 1 question you should ask yourself: is there water in my formula? If there is not, then an antioxidant will be enough to preserve your product from going rancid. Usually lip balms, whipped butters, stick balms are made up only of vegetable oils, butters and eventually waxes. No water involved :D. The most used antioxidants are vitamin E and rosemary extract (which will impart its own aroma into your products and will make them smell of rosemary). Adding them to your products will slow down the oxidation process, but don't forget they are as useful for your skin too. ;) Remember that antioxidants can't kill bacteria and molds, should you consider adding them (erroneously) as a preservative in water based cosmetic. I'm Natalia Rose. And today, we're going to talk about how long homemade juices will last. Most homemade juices are made by centrifugal juicer, which heats up the juice slightly while it's being made. This is why you want to consume a centrifugally processed juice as soon after making it as possible. As soon as it's made, the juice will start to oxidize. The more it's exposed to air, the quicker it will oxidize. Now, there are a few tricks to help your juice last longer. One that would be to make sure that you put it in a container that is very well sealed and doesn't have any extra air in it. So fill it up to the top of the container as possible so that it exposes little air as possible. Another thing you can do if you want your juice to last a couple of days would be to immediately freeze it. Freezing a juice will compromise its enzymatic activity a bit, but it will enable most of the juice to stay in integrity and certainly will enable to last a whole lot longer. The other type of juicer would be a cold press juicer like a Norwalk Press. As more and more people are juicing, more and more people are using the Norwalk Press at home, which is more of a commercial juicer. But the great thing about the Norwalk Press Juicer, the cold press juicing, is it enables the enzymes to stay intact for a much longer duration. Adding lemon or lime to your juice will extend its duration as well because of the citric acid. And a green juice that has no fruit in it will last longer than a green juice that does have fruit in it. So those are a few things you can keep in mind. One way to test and see whether your juice is still fresh just simply to taste it. If there's any fermentation, it's past its prime. If you do choose to consume a juice made from a centrifugal force juicer, the next day, the juice won't be bad by any means. It will just have significantly lost its vitality. So it's still safe to consume and can be fairly beneficial, it will have some vitality, and it will still be full of chlorophyll, but it just won't have the same zip, the same life force it would have immediately upon consumption.

I'm not sure if it's because commercially available products tend to be fairly expensive or maybe, because oral forms of vitamin c are so readily available, that it just seems logical that you should be able to make your own serum. Today I'll give you my take. Let's start exploring this topic with simply dissolving the crystals of vitamin c that are in this capsule or tablet, in water... ...If you put the resulting solution of dissolved vitamin c on your skin, as soon as the water evaporates, the vitamin c that was dissolved in the water will re crystallize on your skin before it can be absorbed. Since crystallized vitamin c can't be absorbed into your skin, it can't work as an antioxidant. See, you need a carrier to hold the vitamin c molecule in the solution so it can penetrate into your skin cells. If you have sufficient chemistry skills to grind up vitamin c... ...and use a carrier like propylene glycol or glycerin, and you know how to calculate and measure the amount of ascorbic acid you need, you can solubilize it and mix it properly. That in theory, could yield a functioning, topical vitamin c product. However, the problem here is that you are JUST going to have ascorbic acid, regular vitamin c, which is water soluble so it doesn't penetrate the lipid membranes of skin cells very well. Because it's acidic, it can be irritating when applied to the skin. And lastly, the acidic form is unstable because it's very quickly oxidized, and thereby inactivated. For those reasons, if you're going to make a topical vitamin c product, you really want to use the ester form of vitamin c, not the acid form. The advantages to esters are that, first, because they are fat soluble, they better penetrate the lipid based barrier of your skin. Second, because they are not acidic they tend to be less irritating. And third, the fatty groups on the esters increase the stability of the vitamin c so its not as easily oxidized and inactivated. At the end of the day, when the vitamin c ester is absorbed into the skin, it then is changed back to regular ascorbic acid, so what you've done is in a non irritating fashion... you've effected better penetration at higher levels and maintained stability by using an esterified form. Creating this is beyond the scope of most amateur chemists. The final reason to not DIY vitamin c is that since it's so difficult to assess the efficacy of topical antioxidants, especially at home, by using a DIY vitamin c product, while they might feel nice, you could go on for months or years wasting your time with a product that doesn't work. So your take away today is, why take a chance on a product you don't know and miss out on the very valuable benefits available from professionally prepared topical antioxidants. The mangosteen is one of Malaysia's farm fruit from the guttiferae family. This tropical fruit is seasonal, fruiting during the months of June to August and December to January each year. It takes a mangosteen tree 8 years to bear fruits, if it is planted by seed. It is rare to see the mangosteen in the market today as it is snapped up quickly for use as traditional medicine. Much have been reported about the mangosteen (Garcinia mangostana) as having antioxidant, anti-inflammatory, anti-cancer and antihistamine properties. Studies have found xanthones, a polyphenolic compound in this fruit. Xanthones have antioxidant, antibacterial, anti-inflammatory, anti-tumor, anti platelet aggregation, anti-fungal and anti tombolic properties when tested on rats. The fruit contain thiamin, riboflavin, niacin, calcium, phosphorus, potassium, carbohydrates, fiber, vitamin A, protein, iron, magnesium and ascorbic acid. The peel contains xanthonoids and phytochemicals. This fruit contains a compound called mangostin. . There are claims that mangosteen consumption can prevent cancer. These claims have not been proven safe and effective on human. To date, no test has been conducted on humans since 2014. Laboratory studies in vitro seemed to suggest the rind might reduce the risk of cancer cell growth in the bowel of rats. In the local scenario, there are other uses of the pericarp after the fruit is consumed. Mangosteen cannot be consumed with sugar. A fatal case was reported in Sarawak where a patient died, foaming at the mouth, after consuming mangosteen with sugar. Today we are going to discuss an interesting phenomena that many of use have experiences in our garden. You take a bight of that tomato, apple or carrot and it has such a vibrant flavour you wonder how you will ever eat them from the grocery store again? Then you wonder why the fruit and vegetables you enjoy in the garden tastes better then store bought. Although there are many crop specific reasons there are three general reasons why this is the case. The first is the crops you select. The University of Texas completed a study evaluating the USDA nutrient content data from 43 different garden crops between 1950 and 1999. What they found is in the time frame there was a significant drop in the nutrient content of the 43 crops. The researchers were able to show that the nutrient content of crops is as a result of the genetic variability. So the genetics of the crops control the nutrient levels of their produce. This is supported by some of the findings of the home garden field trials this year. We found although there were differences in macro and micro elements in the soil it did not impact the nutrient density of the pepper tissue we sampled. So how does this impact the flavour of your crops? I think it is fair to say most of us grow crop varieties that are not found in stores. I myself find more heirloom crops in my garden year after year. the genetic diversity of heirloom crop varieties allow us to safely associate these with the genetic pool from the 1950s. The crops found in todays grocery stores were then developed into the more shelf stable commercial crops and constitute the newer varieties tested. The researchers found that the increased nutrient content of these crops impacted levels of more complex molecules like ascorbic acid that impact things like pH and flavour. Generally associating higher nutrient content with better flavour indicators. The second is the harvest time. Store bought produce is generally harvested and shipped long distances. As such in order for the crops to be ripe when purchased and to have the longest shelf time once at the store they are often picked prior to ripeness. The university of California Davis studied the relationship between ripeness and flavour. They found that their panelists described tomatoes that were picked and ripened off the vine as less sweet, more sour and less “tomato-like” then the crops picked at peak ripeness. This caused by the early harvest as the development of flavour influencing compounds stop when the crop is removed from the plant. Ripening will continue however sugar and ascorbic acid levels do not change in the tomatoes. You can test this using a Brix meter that measures the sugar content of your crops. the higher the number the more sugar the crop has. If you pick a tomato from the store and one that is ripe in your garden you should see the garden score much higher . This results in a reduced flavour in early harvest crops even in a side by side comparison of tomatoes from the same plant. The third is the achievement factor. Although I don't have a paper or research supporting this I think you might agree with me on the third reason. The sense of achievement is a strong one. Having cared for grown and harvested produce from your own garden leaves me with a sense of satisfaction that is hard to describe. There have been plenty of studies to suggest that subjects in a positive mood have correlated positive biophysical consequences. This may result in a heightened sense of taste. So to answer the original question of why produce from our gardens taste better then store bought produce. it is likely what we can assume a sense of achievement helps enhance the flavour of the higher genetic potential heirlooms harvested at peak ripeness. NOTE: GARLIC SHOULD NEVER BE CANNED EITHER BY WATER BATH OR PRESSURE CANNING METHODS!!! Do you like to buy the prepared minced garlic from the grocery store like I do? I make no secret of the fact that I love my giant jar of garlic that is ready to go whenever I need to plop a spoonful into the skillet! I am not ashamed and you shouldn't be either. However, sometimes I don't know where the garlic has originated from and sometimes I have some garlic that needs to be dealt with and that is the case that brought on this tutorial. I like to purchase the already peeled garlic cloves that come in bags in the fresh produce section of my market. I ended up having a bunch left that needed to be used up so I chopped it super fine with my knife and stuck it into a jelly jar. I wanted to make sure it could be preserved for at least a week so I added a bit of water and a 1/8 teaspoon of citric acid and gave it a good stir. When I went to use it a few days later I realized that my homemade version of ready garlic was pure white and beautiful. Not yellow and dingy looking like the grocery store version. I will be making my own ready garlic from now on and this is how I did it! You might think that you don't have citric acid in your kitchen, but if you are a home canner, reach for that jar of "Fruit Fresh" and that will do the trick. Vinegar and/or lemon juice is not going to work here and will not prolong the shelf life of the garlic like the citric acid will. Neither will Ascorbic acid. Citric acid is what you will need. I believe that this pint jar of garlic I made today will safely last in my fridge for three months. You should only prepare as much as you feel you will use in a certain amount of time. Tip Use ascorbic acid to prevent the peaches from browning during the mixing or freezing process. Step 3: Peel and slice the peaches Remove the peaches from the freezer. Peel and slice them into the mixing bowl with the sugar and ascorbic acid. Then let the mixture stand for 5 to 10 minutes, until the peaches start to release their juices. Step 5: Label freezer bag and add 2 cups fruit Label a quart-sized freezer bag with the date. Sodium benzoate (also known as e211) is a substance that has the chemical formula NaC7H5O2. It is a synthetic chemical produced when benzoic acid, that is found naturally in some spices and fruits, is combined with sodium hydroxide. Uses - Under acidic conditions, it inhibits the growth of mold, bacteria, and yeast, extending a product's shelf life. It is most widely used in acidic foods, like - carbonated drinks, salad dressings, pickles, jams and fruit juices, and condiments. Less commonly, this substance is used as a medication to treat hyperammonemia, a rare condition which causes excess ammonia to accumulate in the blood. FDA has granted sodium benzoate GRAS status, and the safe limit in food is 0.1% by weight. In addition, foods have concentrations far lower--more like 0.025 percent to 0.05 percent. Allergy - some studies have concluded that sodium benzoate intolerance can cause skin reactions, like - hives, otherwise known as urticaria. For instance, a study issued in 1984 in the journal "Allergy" found that 4 out of 27 children experienced urticaria in response to this substance. Moreover, research has shown that sodium benzoate, along with artificial food colorings, can cause children with ADHD to be more hyperactive. More importantly, a professor at the University of Sheffield established that consuming foods with this substance may damage the DNA structure and leads to neurodegenerative diseases, such as Parkinson's disease. Note - To reduce the risk of benzene exposure, avoid buying soft drinks that list both sodium benzoate and ascorbic acid as ingredients because when sodium benzoate combines with ascorbic acid (the synthetic form of vitamin C) benzene can form. Benzene damages the bone marrow and can cause a decrease in red blood cells, leading to anemia. In addition, benzene can cause excessive bleeding and depress the immune system, increasing the chance of infection. Thank you. It feels so good on the teeth to bite into it, and my kids go crazy for them .. so I spent a bit of time researching how they're made commercially. My biggest motivation for doing this was to see if we could make our own at home, and I'm actually still trying to figure out how to make gelatin and corn syrup from scratch, so if I can figure out how to do that, maybe I'll show how to do it in another project video. Only a small handful of you have ever seen the LEGO Gummy video I made in 2010, and that's because it was nearly 5 years ago, before I really got serious about making videos. I took it off my channel in 2012 because I had full intentions of making a better version, so here it is .. 3 years later! :) Now I wanted to make candies that made people look twice, and LEGO bricks instantly came to mind because what's more awesome than LEGO and gummy put together? But I wasn't sure where could you get a mold for making LEGO bricks. Surfing around the internet, I stumbled across an awesome Instructable by SFHandyman: http://bit.ly/IBSFHandyman To my amazement, not only had he shown how to make a mold for making LEGO candy, he also made LEGO gummies as well! I played around with loads of variations in recipes to see what texture and tastes I liked the best. And I've kept experimenting off and on for the last 4 years, using my kids and wife for feedback. They gobble them up no matter what variations I use, but I've finally settled on 1/2 cup of very cold water, 1/4 cup of corn syrup, 2 packets of unflavored gelatin, and 1 pack of Jell-O. I've found that the corn syrup seems to help smooth out the texture and the taste. If you try making this recipe, it's very important to start the gelatin in cold water. Stir it up, then let it sit for 5 minutes before you turn on the heat. Otherwise, you'll get gobby clumps of undissolved gelatin in your syrup that doesn't look very appetizing. I originally made my silicone mold with a 2 part mix from a special effects supply company. I used real LEGO bricks set on a LEGO base, and built a makeshift retaining wall with bricks and play-dough. I don't plan to make a tutorial on how to make the mold, but I want to do a video on how to make a silicone mold in general. It's amazing to see how much detail the silicone can transfer to the final gummy products. If you look closely at my candies you can even see the little “LEGO” text on top of the gummy LEGO studs. To make sour gummies, we often add citric acid. They are incredible! But if you don't have citric acid, try taking SFHandyman's suggestion and add vitamin C. The citric and ascorbic acids in the vitamins sour them the same way, which actually makes them taste just as great, and enriches them with vitamin C as well.
