A delicious side dish that is spicy and sweet. Super easy and requires ingredients that you probably already have on hand. Adapted from a recipe on Pinterest. 2 large sweet potatoes, peeled and cut into 1" cubes 2 -1/2 Tablespoons olive oil 2-1/2 Tablespoons brown sugar 1 teaspoon chili powder ½ teaspoon salt ¼ teaspoon cayenne pepper Honey Put sweet potatoes that have been peeled and cubed in a bowl. Combine olive oil, brown sugar, chili powder, salt and cayenne pepper with the potatoes and stir well. Let sit on counter for 10 minutes, stirring after 5 minutes to make sure everything is well coated. Spray a cookie sheet or line it with non-stick aluminum foil. Use a cookie sheet that has sides. Pour the potatoes and coating on the cookie sheet a drizzle with honey. Bake in a preheated 400° oven for 40-45 minutes or until tender, stirring about every 10 minutes. Pour into a bowl or container. Stir in the oats and chia seeds. Add the berries and allow to soak overnight or for a couple of hours. Lunch: Baked Sweet Potatoes with Baked Beans // Calories: 694 200g Baked Beans (I used a can of Amy's Organic) 350g Baked sweet potatoes (cut into fries and bake at 400F for about 40 minutes on parchment paper) 1 TBSP tahini 140g spinach 1 tbsp nutritional yeast 1/2 cup salsa Directions: Arrange everything in a bowl and devour. NOM. Dinner: Red Lentil Chili with zucchini noodles // Calories: 708 (Use 1/3 of the following recipe for 1 portion) Red Lentil Chili Recipe: 1 cup red lentils 200g bacon tempeh 1 large can (796g) crushed tomatoes 220g mushrooms 3 stalks celery 150g sweet corn Spices to taste: garlic powder, chilli powder, smoked paprika, turmeric, salt The rest: 600g zucchini (about 2 large) 1 tbsp nutritional yeast 1 tbsp tahini Directions: 1)In a large pot, bring 3 cups water + crushed tomatoes + lentils + chopped bacon tempeh + spices to a boil. 2) Reduce heat and simmer for 15 min. 3)Then add chopped mushrooms, corn, celery and simmer for another 10-15 min, or until everything is cooked to your liking. Serve on a bed of zucchini noodles (TIP: use a vegetable peeler to make the noodles if you don't have a spiralizer). Top with tahini and nutritional yeast. Dessert: approx 100 calories of chocolate Total calories for the day - 2209

You are not going to believe how AMAZING these cookies taste… and they’re healthy?!? Servings: 28 (small) cookies Nutrition facts- Serving: 1, Calories: 47, Fat: 1.5 g, Carbs: 8.1 g, Protein: 1.6 g Ingredients: - 1 can chickpeas rinsed and drained - ¼ cup unsweetened almond milk - 2 teaspoons vanilla extract - ¼ cup honey - 2 tablespoons peanut butter - 2 egg whites - ½ teaspoon baking powder - 1 cup old fashion oats - ½ cup dark chocolate chips Steps: - Place chickpeas, almond milk, and vanilla in food processor/blender; pulse until mixture forms a smooth paste. - Pour chickpea batter into a mixing bowl. - Add honey, peanut butter, egg whites, and baking powder to mixture; mix until thoroughly combined. - Without cleaning out food processor/blender, add the oats and pulse to a flour-like consistency. - Stir oats and chocolate chips into batter. - Drop cookies onto baking sheet (will not spread and will remain soft). - Bake for 10 minutes at 300˚F

The Best Easy Cinnamon Buns (Low Fat, Vegan)

Today is so very special day - My Mom’s Birthday! So we’ll veganise and make much healthier, of course, My Mom’s favourite recipe of Cinnamon Buns. Oh, I am so exited!! This recipe is a little weird, since it starts with boiling a potato, but trust me on this, potato starch will definitely help you get Moist, Spongy, Stretchy, so Perfect Heathy Buns for every special and non special occasion. Shall we proceed to our cheap simple Ingredients? Ingredients: For the dough: 1 medium Potato + 1 cup Water (if you don’t feel adventurous, substitute for 1/2 cup Pumpkin puree) 1/2 cup Milk (non-dairy, of course) 25 g fresh Yeast (or 1 package Dried Yeast) 1/8 cup + 1/8 cup Sugar 1/2 cup + 1 cup Flour (any kind of your choice) 1 tsp Vanilla 1/4 tsp Salt For the filling: 1/4 cup Sugar (brown or coconut will work best, but I haven’t any) 1 tbsp Cinnamon Glaze: 1/8 cup Maple syrup 1 tbsp Water 1. First of all the strangest part: peel, cut and boil the potato in a cup of water. Boil longer than usual until potato starts to fall apart (~30 min). Mash were well, we don’t want potato chunks in our Perfect Buns! You may use blender, even better (mine is broken). 2. In a large mixing bowl measure 1/2 cup of potato and 1/2 milk. Mixy mix and make sure that concoction is warm but not hot (that means: If you can stick your finger in there and you can feel pleasant warmth). I’ve added super hot mash and milk from the fridge. It turned Perfect! 3. Crumb the yeast, pour 1/8 cup sugar and 1/2 cup flour. Mix mix mix. Cover. Set aside for 25-30 min in warm place. 4. Take your first dough, add remained 1/8 cup sugar, vanilla (I have vanilla infused sugar) and salt. 5. Gradually add 1cup flour. When spoon is not helpful anymore, scrape the dough on well floured surface and knead well Gradually adding remained flour. Do not be afraid to add a little more or a little less flour if needed. 6. Knead a bit more until you have smooth not very sticky ball. Place back into the bowl, cover and set aside for 1 hour (or until doubled in size) in warm quiet place. 7. Transfer your future masterpiece on well floured surface. Roll roll roll (wine bottle is optional, you can use polling pin) until 1 cm (1/4 inch) thick. 8. Sprinkle filling on the dough as even as possible. 9. Roll the roll (hihi). Cut into pieces and transfer to backing pan. Cover and set aside for 15 - 20 min. 10. Back 30 min in preheated to 190C (375 F) oven. 11. Let cool just a bit, serve and enjoy! DAIRY FREE Cauliflower Alfredo "Cream" Sauce

This creamy dairy-free sauce is delicious over pasta (real, or spaghetti squash) or mixed with rice and veggies. Cauliflower and cashews contain many beneficial nutrients, including vitamins C, B, & K, plus iron and protein. I like that this recipe is free from dairy, soy, and oil. Plus you can double (or triple!) the recipe and keep the leftovers in the fridge for a few days. Cauliflower (1 medium sized head) Water ⅔ c raw cashews ⅓ c nutritional yeast 1 tsp brown mustard juice of ½ a lemon 1 tsp salt (or more to taste) 1. Break apart the cauliflower into small pieces and place in a covered pot with 1 inch of water covering the bottom. 2. Steam until soft (15 minutes) 3. Combine steamed cauliflower (plus the water it was boiled/steamed in) and additional ingredients in a high speed blender or food processor. 4. Blend until creamy. If the sauce is too thick, add more water until it reaches the consistency you like.

The salad is tied together with this wonderfully fresh apple vinaigrette. Peasant Salad W/Chicken Recipe Ingredients: Mixed greens 1 small head organic cauliflower, cut into bite size pieces ½ - 1 lb. brussel sprouts, ends trimmed and cut into bite size pieces 1 fuji apple, peeled and cut into bite size pieces and drizzled with fresh lemon juice 6 slices bacon, cooked and cut into bite size pieces 1 cup pecan pieces, toasted in a pan on the stove ¼ to ½ cup dried cranberries 1 chicken breast, skinless, boneless, and butterflied Olive oil Salt and pepper lemon Apple Vinaigrette: ½ cup olive oil ⅓ cup apple cider vinegar 1 fuji apple, cored and sliced 1 Tbsp. honey ¼ tsp. Onion powder ½ tsp. Garlic powder Salt and pepper Directions: We will start off by making the dressing first. Place all the ingredients into a blender and blend well. Place in a jar and set aside. In a frying pan, place 2 tsp. Olive oil over medium high heat. Once hot, add the cauliflower and brussel sprouts. Add a touch of salt. Cook until the cauliflower and sprouts turn a nice golden brown (5 to 10 minutes). Toss/stir frequently. Test for doneness with a fork. If the cauliflower and sprouts are too firm, add ¼ cup water to the pan and cover with a lid to steam for 1 to 2 minutes. Set the vegetables aside in a bowl. Preheat a grill or frying pan over medium high heat. Coat the chicken breast with the oil and add salt and pepper. If you butterfly the chicken it will cook up much quicker and easier. Place the chicken on the pan and cook about 4 minutes per side. Test for doneness by either using an instant read thermometer (165 degrees F.) or by cutting into the chicken and looking for no pink. Once the chicken is done set it aside to cool for 3 to 5 minutes before cutting into slices. Place the greens into a large bowl and add the dressing and toss. You want the greens nicely coated in the vinaigrette. You can add all the ingredients and toss together if you like. I just tossed the greens and then added the bacon, cauliflower and brussel sprouts, apple pieces, cranberries, pecans and the chicken slices. Drizzle more dressing over the top. Serve and enjoy! Ingredients: 3 cups oatmeal 6 scoops protein powder (vanilla flavor suggested 5 tablespoons peanut butter (cinnamon raisin flavor suggested) 1 cup almond mlk 1/3 cup honey 1 tablespoon cinnamon 1 tablespoon vanilla extract Directions: Combine all ingredients in bowl and stir. If needed, add a little water to help with mixing. The goal here is to keep the mix as dry as possible. If you add too much water you won't be able to form these into bars or bites. Once everything is thoroughly mixed, make small size bites or bars on tin foil. With the amounts shown I was able to make 18 bites. Once done, place in refrigerator for 30-45 minute or until firm.
